Vegetarian Pho

**Ingredients:**

- 8 cups vegetable broth
- 1 large onion, peeled and halved
- 2-inch piece of fresh ginger, sliced
- 2-3 star anise pods
- 4-6 whole cloves
- 1 cinnamon stick

- 1-2 teaspoons coriander seeds (optional)
- 1-2 teaspoons fennel seeds (optional)

**Instructions:**
**Preparing the Broth:**
