Vegetable Fried Rice

Our Vegetable Fried Rice is a favorite among vegetarians and healthy eaters. This easy-to-make dish is packed with colorful vegetables and fluffy rice, seasoned with a blend of savory spices. It's perfect for a quick weekday meal or a satisfying side dish. Try it today and taste the deliciousness!

**Ingredients:**

- 2 cups cooked jasmine or basmati rice, preferably cooled and day-old
- 2 tablespoons vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 small carrot, diced
- 1/2 cup frozen peas
- 1/2 cup corn kernels (fresh or frozen)
- 1/2 red bell pepper, diced
- 2-3 green onions, chopped
- 2-3 tablespoons soy sauce (adjust to taste)
- 1-2 tablespoons sesame oil
- 1/2 teaspoon ground ginger
- 1/2 teaspoon crushed red pepper flakes (optional, for spice)
- Salt and black pepper, to taste
- 2 eggs, beaten (optional, for extra protein)
- Fresh cilantro or chopped green onions for garnish

**Instructions:**

1. If you're using fresh rice, cook it according to package instructions and allow it to cool. Day-old rice works best for fried rice.

2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. If using eggs, push the vegetables to the side and scramble the eggs in the empty space. Once cooked, mix the eggs with the vegetables.

3. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the finely chopped onion, garlic, and ginger. Sauté for 2-3 minutes, or until the onion becomes translucent.

4. Add the diced carrots, bell pepper, peas, and corn. Stir-fry for about 3-4 minutes, or until the vegetables are tender.

5. Add the cooled cooked rice to the skillet. Use a spatula or wooden spoon to break up any clumps and stir-fry with the vegetables.

6. Pour in the soy sauce, sesame oil, and crushed red pepper flakes (if using). Continue to stir-fry for 3-4 minutes, ensuring that the rice is well-coated and heated through.

7. Add the chopped green onions and stir them into the fried rice.

8. Season with salt and black pepper to taste.

9. Garnish with fresh cilantro or additional chopped green onions.

10. Serve your Vegetable Fried Rice hot and enjoy!
