**Ingredients:**

For the Teriyaki Sauce:


- 1/2 cup soy sauce
- 1/4 cup mirin (sweet rice wine)
- 1/4 cup sake (or dry white wine)
- 2 tablespoons sugar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger

For the Chicken:


- 4 boneless, skinless chicken thighs or chicken breasts
- Salt and black pepper, to taste
- 2 tablespoons vegetable oil
- Sesame seeds and sliced green onions for garnish

**Instructions:**

**Preparing the Teriyaki Sauce:**

1. In a small saucepan, combine soy sauce, mirin, sake, sugar, minced garlic, and grated ginger.

2. Bring the mixture to a simmer over medium heat. Stir until the sugar has dissolved and the sauce thickens slightly, about 5-7 minutes. Remove from heat and set the teriyaki sauce aside.

**Cooking the Chicken:**

1. Season the chicken thighs or breasts with a little salt and black pepper.

2. Heat a large skillet or pan over medium-high heat. Add the vegetable oil.

3. Place the chicken in the skillet, skin side down (if applicable), and cook for about 4-5 minutes until it's nicely browned.

4. Flip the chicken over and cook the other side for another 4-5 minutes, or until the chicken is cooked through and no longer pink inside. The internal temperature should reach 165°F (74°C).

5. Reduce the heat to low and pour the teriyaki sauce over the cooked chicken.

6. Allow the chicken to simmer in the sauce for a few minutes, turning the chicken to coat it evenly. The sauce will thicken and become glossy.

7. Remove the chicken from the skillet and let it rest for a couple of minutes.

8. Slice the cooked chicken into strips or leave it whole.

**Serving the Teriyaki Chicken:**

1. Place the sliced or whole chicken on a serving plate.

2. Drizzle some of the teriyaki sauce from the skillet over the chicken.

3. Garnish with sesame seeds and sliced green onions.
