Ingredients

- 2 large whole wheat tortillas (or any tortillas of your choice)


- 4 large eggs


- 1/4 cup diced bell peppers (red, green, or yellow)


- 1/4 cup diced red onion


- 1/4 cup diced tomatoes


- 1/4 cup diced mushrooms


- 1/4 cup grated cheddar or Monterey Jack cheese


- Salt and pepper to taste


- Cooking oil or non-stick cooking spray

Preparation

Preparing the Vegetables:

1. Heat a non-stick skillet over medium heat and add a small amount of cooking oil or non-stick cooking spray.

2. Sauté the diced bell peppers, red onion, tomatoes, and mushrooms for about 3-4 minutes or until they become tender. Season with a pinch of salt and pepper. Remove from the skillet and set aside.

Making the Scrambled Eggs:

1. In a bowl, beat the eggs and season with salt and pepper to taste.

2. In the same skillet, add a little more cooking oil if necessary and heat it over medium heat.

3. Pour the beaten eggs into the skillet and cook, stirring occasionally, until they are just set but still slightly creamy. Remove from heat.

Assembling the Breakfast Quesadillas:

1. Lay out the tortillas on a clean surface.

2. Divide the scrambled eggs, sautéed vegetables, and grated cheese evenly between the two tortillas.

3. Fold each tortilla in half to create a half-moon shape.

Cooking the Quesadillas:

1. Heat the skillet over medium heat, and add a touch of cooking oil or non-stick cooking spray.

2. Place the quesadillas in the skillet and cook for about 2-3 minutes on each side, or until they are golden brown and the cheese has melted.

3. Remove from the skillet and let them cool for a minute or two before cutting into wedges.

Serving:
