Ingredients

- 2 ripe bananas


- 1 cup oat flour (you can make your own by blending rolled oats until fine)


- 1/2 cup unsweetened almond milk (or any plant-based milk of your choice)


- 1 tablespoon maple syrup or agave nectar


- 1 teaspoon vanilla extract


- 1/2 teaspoon baking powder


- 1/2 teaspoon ground cinnamon (optional)


- A pinch of salt


- Cooking oil or vegan butter for frying


- Fresh fruit, maple syrup, or nut butter for topping (optional)

Preparation

1. In a mixing bowl, mash the ripe bananas with a fork until they are mostly smooth.

2. Add the oat flour, almond milk, maple syrup, vanilla extract, baking powder, cinnamon (if using), and a pinch of salt to the mashed bananas. Stir until you have a smooth batter. If the batter is too thick, you can add a bit more almond milk to reach your desired consistency.

3. Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking oil or vegan butter.

4. Pour a ladleful of pancake batter onto the skillet for each pancake. Use the back of the ladle to spread the batter into a round shape.

5. Cook the pancakes until you see bubbles forming on the surface, then flip them over and cook the other side until it's golden brown.

6. Transfer the cooked pancakes to a plate and cover them to keep warm while you cook the remaining pancakes.

7. Serve your Vegan Banana Pancakes hot, topped with fresh fruit, a drizzle of maple syrup, or a dollop of your favorite vegan nut butter.
