Lomo Saltado, a beloved Peruvian dish, beautifully melds the flavors of stir-fried beef, vibrant vegetables, and tantalizing spices. Marinated beef strips are quickly seared, then tossed with a colorful mix of red onions, bell peppers, tomatoes, and a touch of jalapeño or aji amarillo for a hint of heat. Fresh cilantro and green onions add a burst of freshness, while a crown of crispy French fries completes the dish. Served over a bed of white rice, Lomo Saltado offers a delightful fusion of Peruvian and Chinese culinary influences, creating a mouthwatering and satisfying experience.

Ingredients

For the Marinade:

1.5 lbs (700g) beef sirloin, sliced into thin strips

3 tablespoons soy sauce

1 tablespoon red wine vinegar

1 teaspoon ground cumin

3 cloves garlic, minced

Salt and pepper to taste

For the Stir-Fry:

2 tablespoons vegetable oil

1 red onion

thinly sliced

1 yellow bell pepper thinly sliced

1 red bell pepper, thinly sliced

2 medium tomatoes, cut into wedges

1 jalapeño or aji amarillo pepper, thinly sliced (adjust to taste for spiciness)

1/2 cup fresh cilantro

chopped- 4 green onions chopped

1 cup French fries (homemade or frozen), cooked according to package instructions

For Serving:

- Cooked white rice

Preparation

Marinating the Beef:

1. In a bowl, combine the sliced beef with soy sauce, red wine vinegar, ground cumin, minced garlic, salt, and pepper. Let it marinate for at least 30 minutes.

Stir-Frying:

1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat.

2. Add the marinated beef and stir-fry until browned and cooked to your liking. Remove from the wok and set aside.

3. In the same wok, add another tablespoon of oil.

4. Stir in the sliced red onion, bell peppers, tomatoes, and jalapeño or aji amarillo. Cook for a few minutes until the vegetables are slightly tender but still vibrant.

5. Return the cooked beef to the wok and toss everything together.

6. Add the chopped cilantro and green onions. Toss again to combine.

Serve:

1. Arrange the cooked French fries on top of the stir-fry.

2. Serve the Lomo Saltado over cooked white rice.
