Ingredients

For the Arepas:

- 2 cups pre-cooked cornmeal (masarepa or masa harina)

- 1 1/2 cups warm water

- 1/2 teaspoon salt

- 1 cup grated queso fresco (Colombian fresh cheese) or mozzarella cheese

For the Filling:

- 1 cup grated queso fresco (or mozzarella cheese)

Preparation

Making the Arepas:

1. In a mixing bowl, combine the pre-cooked cornmeal (masarepa), warm water, and salt. Knead the mixture until you have a smooth, pliable dough. If it's too dry, you can add a bit more water, but be careful not to make it too wet.

2. Divide the dough into equal-sized portions and shape them into balls.

3. Flatten each dough ball into a round, flat disc, about 1/2 inch thick.

4. Take one of the flattened discs and place a tablespoon of grated cheese in the center. Then, cover it with another flattened disc and pinch the edges together to seal the cheese inside. Make sure the cheese is fully enclosed within the arepa.

5. Repeat this process with the remaining dough and cheese to make more arepas.

Cooking the Arepas:

1. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with cooking oil or non-stick spray.

2. Cook the arepas in the preheated skillet for about 3-4 minutes per side, or until they are golden brown and the cheese inside has melted.

3. Remove the arepas from the skillet and serve them hot.

Serving the Arepas:
