French Onion Soup

This classic French Onion Soup recipe features thinly sliced caramelized onions in a rich broth made with beef, white wine (optional), and aromatic spices. Topped with toasted baguette slices and a generous layer of melted Gruyère cheese, the soup is finished under the broiler for a deliciously golden and gooey crust. This comforting dish is a perfect balance of sweet, savory, and cheesy flavors, making it a timeless and satisfying choice for any occasion.

**Ingredients**

  • 4 large onions, thinly sliced

  • 3 tablespoons butter

  • 1 tablespoon olive oil

  • 1 teaspoon sugar

  • 2 cloves garlic, minced

  • 8 cups beef broth

  • 1/2 cup dry white wine (optional)

  • 1 bay leaf

  • Salt and pepper to taste

  • Baguette slices

  • Gruyère cheese, grated

 

**Instructions**

1. In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until the onions are soft and golden brown, about 20-30 minutes.

2. Sprinkle sugar over the onions to help with the caramelization process.

 

3. Add the minced garlic to the caramelized onions and cook for an additional 1-2 minutes until fragrant.

 

4. If using wine, pour it into the pot and stir, scraping the bottom to release any flavorful bits stuck to the pot.

5. Pour in the beef broth and add the bay leaf. Season with salt and pepper to taste.

6. Bring the soup to a simmer and let it cook for at least 20-30 minutes to allow the flavors to meld.

7. While the soup is simmering, preheat the broiler. Arrange baguette slices on a baking sheet and toast them under the broiler until they're lightly browned.

8. Remove the bay leaf from the soup.

 

9. Place a slice or two of the toasted baguette on top of the soup.

10. Sprinkle a generous amount of Gruyère cheese over the bread.

11. Place the bowls under the broiler until the cheese is melted and bubbly, with a golden brown crust.

12. Carefully remove the bowls from the oven (they will be hot!) and let them cool for a minute before serving.
