Bannock

This bannock recipe provides a straightforward method for making a versatile and delicious bread. Combining basic pantry ingredients like flour, baking powder, and oil, the dough comes together quickly. The option to include sugar allows for a sweet variation. Shaping the dough and choosing between baking or pan-frying offers flexibility in preparation. Once cooked, the bannock can be enjoyed warm with various toppings, making it a versatile and satisfying bread suitable for any meal or snack.

**Ingredients**

- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar (optional for sweet bannock)
- 2 tablespoons vegetable oil or melted butter
- 3/4 to 1 cup water or milk (adjust as needed)

**Instructions**

1. **Mix Dry Ingredients:**

   - In a large bowl, whisk together the all-purpose flour, baking powder, salt, and sugar (if making sweet bannock).

2. **Add Wet Ingredients:**

   - Make a well in the center of the dry ingredients and pour in the vegetable oil or melted butter.
   - Gradually add water or milk, stirring continuously until a soft dough forms. Add the liquid slowly, as you may not need the full amount.

3. **Knead the Dough:**

   - Turn the dough onto a floured surface and knead it briefly until it comes together. Be careful not to over-knead; just make sure it's well mixed.

4. **Shape the Dough:**

   - Pat the dough into a round, flat shape. Traditionally, bannock can be shaped into a circle or smaller rounds.

5. **Cooking Options:**

   - **Bake:** Preheat your oven to 425°F (220°C). Place the shaped dough on a greased baking sheet and bake for 12-15 minutes or until golden brown.

   - **Pan-Fry:** Heat a skillet or griddle over medium heat. Add a small amount of oil or butter. Cook the bannock for 3-5 minutes on each side, or until golden brown.

6. **Serve:**

   - Once cooked, let the bannock cool for a few minutes. Serve it warm, and it's delicious on its own or with butter, jam, honey, or other toppings of your choice.

Feel free to customize this basic bannock recipe based on your preferences. You can make it sweet or savory, add herbs, or even incorporate ingredients like raisins or dried fruit for extra flavor. Bannock is a versatile bread that can be enjoyed in various ways.
