**Ingredients**
- 2 lbs (about 900g) potatoes, peeled and thinly sliced
- 1 lb (about 450g) cooked ham, diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup (about 250g) Gruyere cheese, grated
- 1 cup (about 250g) Emmental cheese, grated
- 1 cup (about 250ml) heavy cream
- 1 cup (about 250ml) chicken or vegetable broth
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
**Instructions**
1. Preheat your oven to 375°F (190°C).
2. Peel and thinly slice the potatoes. You can use a mandolin for even slices.
3. In a skillet over medium heat, sauté the chopped onion and minced garlic until softened and fragrant.
4. In a greased casserole dish, layer half of the sliced potatoes, followed by half of the diced ham and half of the sautéed onion and garlic. Repeat the layers.
5. In a bowl, mix together the grated Gruyere and Emmental cheeses. Reserve a small portion for topping. Sprinkle the majority of the cheese mixture over the layered potatoes and ham.
6. In another bowl, whisk together the heavy cream, chicken or vegetable broth, Dijon mustard, salt, and pepper. Pour this mixture evenly over the layered ingredients.
7. Sprinkle the reserved cheese mixture over the top.
8. Cover the casserole dish with foil and bake in the preheated oven for about 45-50 minutes. Remove the foil during the last 15 minutes to allow the top to brown.
9. Once the potatoes are tender and the top is golden and bubbly, remove from the oven. Garnish with chopped fresh parsley before serving.
