Classic French Crepes

Classic French Crepes are thin, delicate pancakes with a simple yet versatile batter. Made with basic ingredients like flour, eggs, milk, and melted butter, the batter is blended until smooth and allowed to rest. The crepes are cooked in a hot skillet or crepe pan, resulting in thin, golden pancakes with a slightly crispy edge. Whether filled with sweet options like Nutella and fruits or savory choices like ham and cheese, these crepes are a delightful and customizable treat. **Ingredients:**

- 1 cup all-purpose flour
- 2 large eggs
- 1 1/4 cups milk
- 1/4 cup water
- 2 tablespoons melted butter

- Additional melted butter for greasing the pan

**Instructions:**

1. **Prepare the Batter:**


   - In a blender, combine the flour, eggs, milk, water, melted butter, and sugar (for sweet crepes) or a pinch of salt (for savory crepes).
   - Blend the ingredients until the batter is smooth. You can also whisk the ingredients by hand in a mixing bowl.

2. **Rest the Batter:**


   - Let the batter rest in the refrigerator for at least 30 minutes. This allows the flour to fully absorb the liquid, resulting in a smoother batter and better texture for the crepes.

3. **Cooking the Crepes:**


   - Heat a non-stick skillet or crepe pan over medium heat. Brush the pan lightly with melted butter.
   - Pour a small amount of batter (about 1/4 cup) into the center of the pan, swirling it around to spread it thinly and evenly.

4. **Cook and Flip:**


   - Cook the crepe for about 1-2 minutes until the edges start to lift and the bottom is lightly browned.
   - Flip the crepe using a spatula and cook the other side for an additional 1-2 minutes.

5. **Repeat:**


   - Repeat the process with the remaining batter, brushing the pan with melted butter before each crepe.

6. **Serve:**


   - Serve the crepes warm with your favorite fillings. For sweet crepes, you can use Nutella, fresh fruits, whipped cream, or powdered sugar. For savory crepes, try fillings like ham and cheese, spinach and feta, or sautéed mushrooms.
