Svíčková na Smetaně

Svíčková na Smetaně is a classic Czech dish featuring marinated beef sirloin served with a rich and creamy sauce. The beef is marinated in a flavorful mixture of buttermilk, vegetables, and spices before being slow-roasted to tender perfection. The creamy sauce, made with a roux, broth, and heavy cream, adds a luxurious touch. The dish is traditionally served with bread dumplings or potato dumplings and garnished with cranberry sauce for a delightful blend of savory and slightly sweet flavors. **Ingredients:**

*For the Marinade:*

- 2 pounds (about 1 kg) beef sirloin
- 2 cups buttermilk
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 5 whole black peppercorns
- Salt and pepper to taste

*For the Sauce:*

- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups beef or vegetable broth
- 1 cup heavy cream
- 2 tablespoons lemon juice
- 2 tablespoons sugar
- Salt and pepper to taste

*For Serving:*

- Bread dumplings or potato dumplings
- Cranberry sauce for garnish

**Instructions:**

**Marinating the Beef:**

1. In a large bowl, combine the buttermilk, chopped onion, carrots, celery, minced garlic, bay leaf, black peppercorns, salt, and pepper.

2. Place the beef sirloin in the marinade, ensuring it's fully submerged. Cover and refrigerate overnight or for at least 12 hours.

3. After marinating, remove the beef from the marinade and pat it dry.

4. Preheat the oven to 350°F (175°C).

5. In a large, oven-safe pot, heat oil over medium-high heat. Sear the beef on all sides until browned.

6. Pour the marinade over the beef, cover the pot, and transfer it to the preheated oven. Roast for about 2-2.5 hours or until the beef is tender.

**Making the Sauce:**

1. In a saucepan, melt butter over medium heat. Stir in the flour to create a roux.

2. Gradually whisk in the beef or vegetable broth, followed by the heavy cream.

3. Add lemon juice, sugar, salt, and pepper. Simmer the sauce until it thickens.

**Serving:**

1. Slice the roasted beef sirloin and serve it with the creamy sauce.

2. Accompany the dish with bread dumplings or potato dumplings.

3. Garnish with cranberry sauce for a traditional touch.
