German Blueberry Streusel Pie

**Ingredients:**

For the Pie Crust:

- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 4-6 tablespoons ice water

For the Blueberry Filling:

- 4 cups fresh blueberries, rinsed and drained
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest

For the Streusel Topping:

- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, cold and cubed

**Instructions:**

**Making the Pie Crust:**

1. In a food processor, combine the flour, sugar, and salt. Pulse a few times to mix.

2. Add the cold, cubed butter to the flour mixture. Pulse until the mixture resembles coarse crumbs.

3. Gradually add the ice water, one tablespoon at a time, and pulse until the dough comes together. Be careful not to overmix.

4. Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

**Preparing the Blueberry Filling:**

1. Preheat your oven to 375°F (190°C).

2. In a large bowl, gently mix together the fresh blueberries, sugar, cornstarch, lemon juice, and lemon zest.

**Making the Streusel Topping:**

1. In a small bowl, combine the flour, sugar, and cold, cubed butter. Use your fingers to mix until crumbly.

**Assembling the Pie:**

1. Roll out one disc of pie dough on a floured surface and place it in a 9-inch pie dish.

2. Pour the blueberry filling into the pie crust.

3. Sprinkle the streusel topping evenly over the blueberries.

4. Roll out the second disc of pie dough and place it over the filling. You can create a lattice pattern or a solid crust with slits for ventilation.

5. Trim and crimp the edges of the pie crust to seal.

6. Place the pie on a baking sheet to catch any drips, and bake in the preheated oven for about 45-50 minutes, or until the crust is golden brown, and the filling is bubbly.
