Ratatouille
Ratatouille is a delicious and healthy French vegetable stew that is perfect for a comforting meal any time of year. Our recipe features fresh ingredients like tomatoes, eggplant, zucchini, bell peppers, onions, and garlic, all cooked to perfection in a hearty tomato-based sauce.
**Ingredients:**
- 1 large eggplant, diced
- 2 zucchinis, diced
- 1 large red bell pepper, diced
- 1 large yellow bell pepper, diced
- 1 onion, diced
- 4 cloves garlic, minced
- 2-3 ripe tomatoes, diced
- 3 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper, to taste

**Instructions:**
1. In a large pot or deep skillet, heat the olive oil over medium heat.
2. Add the diced onions and minced garlic, and sauté until the onions are translucent.
3. Add the diced eggplant, zucchinis, and bell peppers to the pot. Sauté the vegetables for about 5-7 minutes, or until they start to soften.
4. Stir in the diced tomatoes, dried thyme, dried rosemary, salt, and black pepper. Cook for another 5-7 minutes, allowing the vegetables to release their juices and blend in flavors.
5. Reduce the heat to low, cover the pot, and simmer for 20-30 minutes, or until the vegetables are tender and the stew has thickened.
6. Taste and adjust the seasoning, adding more salt or herbs if necessary.
