Chicken and Pork Adobo

Chicken and Pork Adobo is a classic Filipino dish that has been passed down for generations. **Ingredients:**

- 1 pound (450g) chicken pieces (drumsticks, thighs, or a whole cut-up chicken)
- 1 pound (450g) pork belly or pork shoulder, cut into chunks
- 1 onion, peeled and sliced
- 4 cloves garlic, minced
- 2 bay leaves
- 1/2 cup soy sauce
- 1/4 cup vinegar (cane vinegar or white vinegar)
- 1 cup water
- 1 teaspoon whole black peppercorns
- 1 tablespoon cooking oil
- Salt and pepper, to taste

**Instructions:**

**1. Marinating the Meat:**

- In a large bowl, combine the chicken and pork pieces with the soy sauce, vinegar, garlic, and black peppercorns. Make sure the meat is well-coated. Marinate for at least 30 minutes to an hour, or you can refrigerate it overnight for the best flavor.

**2. Cooking the Adobo:**

1. Heat a large, heavy-bottomed skillet or pot over medium-high heat. Add cooking oil.

2. Add the marinated meat (chicken and pork) to the skillet, and cook until browned on all sides.

3. Add the sliced onions and bay leaves, and sauté until the onions become translucent.

4. Pour in the marinade from the bowl, along with 1 cup of water. Bring it to a boil.

5. Reduce the heat to low, cover, and let it simmer for about 30-40 minutes, or until the meat is tender and fully cooked. Stir occasionally and add water if needed to prevent it from drying out.

6. Season with salt and pepper to taste. You can adjust the saltiness by adding more soy sauce if necessary.

**3. Serving the Adobo:**

1. Serve the Chicken and Pork Adobo with steamed rice.

2. You can also reduce the sauce further to create a thicker glaze if desired.
